  • 1 cup cherry tomatoes
Marinade

  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes optional, for a kick
  • Salt and freshly ground black pepper to taste

Method
 

Preparation
  1. If using wooden skewers, remember to soak them in water for at least 30 minutes to prevent burning.
Marinating
  1. Combine the shrimp and vegetables in a medium bowl, then whisk together the lemon juice, olive oil, garlic, oregano, red pepper flakes, salt, and pepper in a separate small bowl.
  2. Pour the dressing over the shrimp and vegetables and toss to coat, then let it marinate at room temperature for 15-20 minutes, or in the refrigerator for up to 30 minutes.
Cooking
  1. Preheat your grill or broiler to medium-high heat, then thread the marinated shrimp and vegetables onto the skewers, making sure not to overcrowd them.
  2. Grill or broil for 3-4 minutes per side until the shrimp is pink and opaque, and the vegetables are tender-crisp.
Serving
  1. Remove from heat and serve immediately, garnished with fresh parsley and extra lemon wedges if desired.

Notes

Soaking wooden skewers is crucial to prevent them from burning during grilling. Adjust red pepper flakes to your preferred spice level. Do not overcook the shrimp, as it can become tough quickly. This dish pairs wonderfully with a side of couscous or a light salad.
