  • 12 oz (340 g) dried linguine
  • 1 lb (450 g) large shrimp, peeled and deveined
  • 4 cups (about 120 g) fresh spinach, loosely packed
  • 4 cloves garlic, minced
  • 1 medium shallot, finely diced
  • ½ cup dry white wine (optional, can substitute broth)
  • 3 Tbsp olive oil, divided
  • 2 Tbsp unsalted butter
  • ¼ tsp red-pepper flakes (optional for heat)
  • 1 lemon, zest and juice
  • ½ cup freshly grated Parmesan cheese
  • Salt & freshly ground black pepper to taste
  • 2 Tbsp chopped fresh parsley for garnish

Method
 

Cooking Instructions
  1. Cook linguine in a large pot of salted boiling water for 1-2 minutes less than package directions until al dente.
  2. Drain the linguine, reserving 1 cup of the cooking water, and set aside.
  3. Pat the shrimp dry with paper towels and season with salt, pepper, and red-pepper flakes if desired.

Notes

For extra flavor, you can marinate the shrimp in a little olive oil and garlic for 15 minutes before cooking. Adjust the amount of red pepper flakes to your preferred level of spice. A good quality white wine will enhance the sauce, but broth works well as a substitute.
