  • 1 tablespoon milk dairy or non-dairy
  • Salt and freshly ground black pepper to taste
  • ½ cup fresh baby spinach, roughly chopped
  • 2 tablespoons crumbled feta cheese
  • 1 slice whole-wheat bread, toasted
  • 1 teaspoon olive oil or butter for cooking eggs
  • red pepper flakes Optional: A pinch of for heat

Method
 

Instructions
  1. Whisk eggs, milk, salt, and pepper in a small bowl until light and frothy.
  2. Heat olive oil or butter in a non-stick pan over medium heat.
  3. Pour egg mixture into the pan; as edges set, gently push cooked egg to the center, tilting the pan for uncooked egg to flow underneath.
  4. When eggs are mostly set but still wet, add spinach, feta cheese, and optional red pepper flakes; fold gently until spinach wilts (about 30 seconds).
  5. Remove from heat immediately to prevent overcooking; residual heat will finish cooking the eggs.
  6. Serve the scramble directly on toasted whole-wheat bread and enjoy.

Notes

For extra flavor, you can add a squeeze of lemon juice at the end.
