Ingredients
  

For the Shrimp:
  • 1 pound medium-large shrimp peeled and deveined (fresh or thawed frozen)
  • 0.5 teaspoon chili powder
  • 0.25 teaspoon cumin
  • Salt and black pepper to taste
  • 1 tablespoon olive oil for cooking
For the Salad Bowl:
  • 2 ripe avocados diced
  • 1 cup cherry tomatoes halved
  • 0.25 cup finely diced red onion optional, soak in cold water for milder flavor
  • 0.25 cup chopped fresh cilantro or parsley/dill
For the Lime Dressing:
  • 1 tablespoon extra virgin olive oil
  • 3 tablespoons fresh lime juice
  • 2 cloves garlic minced
  • Salt and black pepper to taste

Method
 

Prep and Cook Shrimp
  1. Pat the shrimp dry, then season with salt, pepper, chili powder, and cumin.
  1. Heat olive oil in a skillet, then cook shrimp for 2-3 minutes per side until pink and opaque.
Prepare Dressing
  1. Whisk together olive oil, lime juice, minced garlic, salt, and pepper for the dressing.
Assemble and Serve
  1. Combine diced avocado, halved cherry tomatoes, red onion, and cilantro in a large bowl. Add cooked shrimp, pour dressing over, and gently toss to combine. Serve immediately.

Notes

For extra flavor, marinate the shrimp for 15-30 minutes before cooking. Adjust the amount of chili powder and cumin to your spice preference. If you don't have fresh lime juice, bottled can be used, but fresh is highly recommended for the best flavor.
