Preparation
  1. Preheat your oven to 400°F (200°C) and prepare a large baking sheet with parchment paper or by lightly greasing it.

Cooking
  1. Place the chicken and optional vegetables on the prepared baking sheet, then pour the lemon-herb marinade over them.
  2. Toss to ensure everything is well coated, then spread into a single layer on the baking sheet.
  3. Bake for 25-35 minutes until the chicken reaches 165°F (74°C) and vegetables are tender and slightly caramelized.

  1. Remove the pan from the oven, let the chicken rest for 5 minutes, and garnish with fresh parsley if desired before serving.
