  • 1.5 lbs boneless, skinless chicken thighs or breasts cut into 1.5-inch pieces
  • 1 cup Kalamata olives pitted and halved
  • 4 oz block feta cheese crumbled or cut into cubes
  • 3 tablespoons extra virgin olive oil
  • 1 lemon half juiced, half thinly sliced
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Combine chicken, olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl, then toss to coat evenly. Marinate at room temperature for 15-30 minutes, or longer in the fridge.
Cooking
  1. Spread the marinated chicken, Kalamata olives, and lemon slices on the baking sheet; add optional vegetables if desired.
  2. Roast for 20-25 minutes.
  3. Remove from oven, sprinkle with feta cheese, and return to cook for another 5-10 minutes until the chicken is cooked through and feta is lightly golden.
  4. Garnish with fresh parsley or dill, if desired, and serve immediately.

Notes

For an extra burst of flavor, try adding a sprinkle of fresh chopped dill along with the parsley as a garnish. Ensure the chicken pieces are roughly the same size for even cooking. Adjust salt and pepper to taste before serving.
