Preparation
- Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Combine chicken, olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl, then toss to coat evenly. Marinate at room temperature for 15-30 minutes, or longer in the fridge.
Cooking
- Spread the marinated chicken, Kalamata olives, and lemon slices on the baking sheet; add optional vegetables if desired.
- Roast for 20-25 minutes.
- Remove from oven, sprinkle with feta cheese, and return to cook for another 5-10 minutes until the chicken is cooked through and feta is lightly golden.
- Garnish with fresh parsley or dill, if desired, and serve immediately.
Notes
For an extra burst of flavor, try adding a sprinkle of fresh chopped dill along with the parsley as a garnish. Ensure the chicken pieces are roughly the same size for even cooking. Adjust salt and pepper to taste before serving.
