Ingredients
  

Steak Marinade & Dressing Base
  • 1 lb sirloin or flank steak thinly sliced against the grain
  • 1 tablespoon Olive Oil
  • 1 large Lemon juiced (about 3-4 tablespoons)
  • 1 tablespoon Red Wine Vinegar
  • 1 teaspoon Dried Oregano
  • 2 cloves Garlic minced
  • Salt & Black Pepper to taste
Steak Cooking
  • 1 tablespoon Olive Oil
Bowl Assembly
  • 1 cup Cucumber diced
  • 1 cup Cherry Tomatoes halved
  • 0.25 cup Red Onion thinly sliced
  • 0.5 cup Kalamata Olives pitted and halved
  • 0.5 cup Feta Cheese crumbled
  • 0.25 cup Fresh Parsley chopped (for garnish)
  • 2 cups Cooked Quinoa or Rice optional, for the base of your bowl

Method
 

Marinade Preparation
  1. Whisk together 1 tablespoon of olive oil, lemon juice, red wine vinegar, oregano, minced garlic, salt, and pepper in a small bowl. This mixture will serve as both the steak marinade and the dressing.
Cooking the Steak
  1. Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the thinly sliced steak and sear for 2-3 minutes per side until cooked to your desired doneness, seasoning with extra salt and pepper.
Bowl Assembly
  1. If using, divide the cooked quinoa or rice among your serving bowls. Arrange the diced cucumber, halved cherry tomatoes, sliced red onion, and Kalamata olives around the grain base.
Finishing Touches
  1. Place the cooked steak slices into each bowl. Drizzle the reserved dressing generously over the steak and vegetables, then sprinkle with crumbled feta cheese and fresh chopped parsley before serving.

Notes

For a spicier kick, add a pinch of red pepper flakes to the marinade. You can also customize your bowl with other Mediterranean-inspired ingredients like chickpeas or roasted bell peppers.
