- Pat the salmon fillet dry with paper towels, then cut it into uniform 1-inch to 1.5-inch cubes.
Marinating
- In a medium bowl, combine 1 tbsp olive oil, dried oregano, garlic powder, white wine vinegar, salt, and black pepper. Add the salmon bites and toss gently, then cover and refrigerate for 10-15 minutes if time permits.
Cooking
- Heat the remaining 1 tbsp olive oil in a non-stick skillet over medium-high heat. Add the salmon bites in a single layer and cook for 2-3 minutes per side until golden brown and cooked through (145°F/63°C internal temperature).
Serving
- Serve immediately, garnished with fresh chopped parsley and a squeeze of fresh lemon juice if desired.
Notes
For best results, do not overcrowd the pan when cooking the salmon bites; cook in batches if necessary to ensure even browning and cooking. Adjust seasoning to your preference.
