Ingredients

  • 1 cup cooked quinoa
  • 1/2 cup canned chickpeas, rinsed and drained
  • 1/4 cup chopped cucumber
  • 1/4 cup cherry tomatoes, halved
  • 2 tablespoons crumbled feta cheese
  • 2 tablespoons Kalamata olives, halved
  • 1 tablespoon fresh parsley, chopped
  • 1/4 cup rotisserie chicken, shredded Optional: for a protein boost

Method
 

Preparation
  1. In a medium bowl, combine cooked quinoa, rinsed chickpeas, chopped cucumber, halved cherry tomatoes, crumbled feta cheese, and halved Kalamata olives.
Dressing
  1. In a small separate bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper to create the dressing.
Combine and Serve
  1. Pour the dressing over the quinoa and vegetable mixture, then add the fresh chopped parsley and optional shredded chicken.
  2. Toss all ingredients gently until well combined and coated with the dressing. Serve immediately or store in an airtight container for later.

Notes

For extra flavor, lightly toast the cooked quinoa in a dry pan before assembling. Adjust salt and pepper to your personal taste preference.
