- Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook until browned and cooked through, then drain any excess fat.
- Add chopped onion and minced garlic to the skillet and cook until softened.
- Stir in the chopped red bell pepper and cook until slightly tender-crisp.
- Pour in the diced tomatoes, Kalamata olives, oregano, and basil; simmer for 10 minutes to meld flavors.
- Stir in the fresh parsley and season with salt and pepper to taste.
- Serve immediately, optionally garnished with feta cheese crumbles.
