  • 1 large cucumber unpeeled, sliced into 1/2-inch thick rounds
  • 1/2 cup pre-made hummus plain or roasted red pepper flavor
  • 1/4 cup Kalamata olives finely diced
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh lemon juice
  • black pepper Pinch

Method
 

Instructions
  1. Arrange the cucumber slices evenly on a serving platter.
  2. In a small bowl, combine the diced Kalamata olives, chopped parsley, and lemon juice; mix well.
  3. Spoon or pipe a generous dollop of hummus onto the center of each cucumber slice.
  4. Top the hummus with a small spoonful of the olive and parsley mixture.
  5. Sprinkle lightly with black pepper just before serving.

Notes

For an extra kick, add a pinch of red pepper flakes to the olive mixture.
