- Arrange the cucumber slices evenly on a serving platter.
- In a small bowl, combine the diced Kalamata olives, chopped parsley, and lemon juice; mix well.
- Spoon or pipe a generous dollop of hummus onto the center of each cucumber slice.
- Top the hummus with a small spoonful of the olive and parsley mixture.
- Sprinkle lightly with black pepper just before serving.
Notes
For an extra kick, add a pinch of red pepper flakes to the olive mixture.
