  • 1 large zucchini chopped into 1-inch pieces
  • 1 red bell pepper chopped into 1-inch pieces
  • 1 pint cherry tomatoes
  • 1/2 red onion cut into wedges
Seasoning & Dressing
  • 2 tbsp olive oil
  • 1 tbsp dried oregano
  • 1/2 tsp garlic powder
  • Salt to taste
  • black pepper to taste
Garnish
  • 1/4 cup Kalamata olives pitted and halved
  • 1/4 cup crumbled feta cheese optional, for garnish
  • Fresh parsley chopped, for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. In a large bowl, combine the chicken, zucchini, red bell pepper, cherry tomatoes, and red onion.
  3. Drizzle with olive oil, then season with dried oregano, garlic powder, salt, and black pepper, tossing until everything is evenly coated.
Cooking
  1. Spread the mixture evenly in a single layer on the prepared baking sheet, ensuring not to overcrowd it.
  2. Roast for 25-30 minutes, or until the chicken is cooked through and vegetables are tender-crisp; halfway through, toss gently.
Finishing
  1. Remove from oven and stir in the Kalamata olives.
  2. Garnish with crumbled feta cheese (if desired) and fresh parsley before serving.

Notes

For extra flavor, marinate the chicken and vegetables for 30 minutes before roasting. Serve with a side of quinoa or couscous for a complete meal.
