  • 1 lb boneless, skinless chicken breasts pounded to 1/2-inch thickness
  • 1 tbsp olive oil
  • 1/2 red onion thinly sliced
  • 1 cup cherry tomatoes halved
  • 1/4 cup Kalamata olives pitted and halved
  • 2 garlic minced
  • 1/2 cup chicken broth
  • 1/2 lemon Juice of
  • 1 tsp dried oregano
  • Salt and black pepper to taste
Garnish (Optional)
  • 1/4 cup crumbled feta cheese optional
  • 2 tbsp fresh parsley chopped

Method
 

Chicken Preparation
  1. Pat chicken breasts dry and season with salt, pepper, and 1/2 teaspoon oregano.
  2. Heat olive oil in a skillet, sear chicken 3-5 minutes per side until cooked through, then remove and tent with foil.
Vegetable Sauté
  1. In the same skillet, sauté red onion until softened, then add garlic and cook for 30 seconds until fragrant.
Sauce and Finish
  1. Stir in tomatoes, olives, remaining oregano, chicken broth, and lemon juice; simmer for 3-4 minutes until the sauce reduces.
  2. Slice chicken and return it to the pan with the vegetables and sauce, tossing to coat.
  3. Serve immediately, garnished with feta cheese and fresh parsley.

Notes

For extra flavor, marinate the chicken in lemon juice and oregano for 30 minutes before cooking.
