Chicken Preparation
- Pat chicken breasts dry and season with salt, pepper, and 1/2 teaspoon oregano.
- Heat olive oil in a skillet, sear chicken 3-5 minutes per side until cooked through, then remove and tent with foil.
Vegetable Sauté
- In the same skillet, sauté red onion until softened, then add garlic and cook for 30 seconds until fragrant.
Sauce and Finish
- Stir in tomatoes, olives, remaining oregano, chicken broth, and lemon juice; simmer for 3-4 minutes until the sauce reduces.
- Slice chicken and return it to the pan with the vegetables and sauce, tossing to coat.
- Serve immediately, garnished with feta cheese and fresh parsley.
Notes
For extra flavor, marinate the chicken in lemon juice and oregano for 30 minutes before cooking.
