  • 1 tbsp olive oil
  • 1 lb ground turkey 93% lean recommended
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 diced red bell pepper
  • 1 cup orzo pasta uncooked
  • 3 cups chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tbsp fresh parsley chopped
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese for serving

Method
 

Cooking Instructions
  1. Heat olive oil in a large skillet and cook ground turkey until browned, then drain excess fat.
  2. Add chopped onion, minced garlic, and diced red bell pepper to the skillet; sauté until vegetables are soft.
  3. Stir in orzo, chicken broth, lemon juice, dried oregano, dried thyme, salt, and pepper.
  4. Bring to a boil, then cover and simmer for 10-12 minutes until orzo is tender and liquid is absorbed.
  5. Remove from heat and stir in fresh chopped parsley.
  6. Serve immediately, topped with grated Parmesan cheese.

Notes

For extra flavor, you can add a pinch of red pepper flakes with the herbs. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
