Preparation
- Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
- Spread the trimmed asparagus on the prepared sheet pan.
- In a small bowl, combine olive oil, minced garlic, dried oregano, lemon zest, salt, and black pepper.
- Drizzle half of the oil mixture over the asparagus, toss to coat, and arrange in a single layer.
Cooking
- Roast the seasoned asparagus in the preheated oven for 8 minutes.
- While asparagus roasts, pat the shrimp dry and toss them with the remaining oil mixture.
- Remove the sheet pan from the oven, arrange the seasoned shrimp and lemon slices alongside the asparagus.
- Return the pan to the oven and bake for another 8-10 minutes, until shrimp are pink and asparagus is tender-crisp.
Serving
- Garnish with fresh parsley and serve immediately.
Notes
For extra flavor, marinate the shrimp for 15 minutes before cooking. Ensure the shrimp are patted very dry for a better sear.
