  • 1 asparagus trimmed
  • 1 lemon thinly sliced
  • Fresh parsley chopped, for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. Spread the trimmed asparagus on the prepared sheet pan.
  3. In a small bowl, combine olive oil, minced garlic, dried oregano, lemon zest, salt, and black pepper.
  4. Drizzle half of the oil mixture over the asparagus, toss to coat, and arrange in a single layer.
Cooking
  1. Roast the seasoned asparagus in the preheated oven for 8 minutes.
  2. While asparagus roasts, pat the shrimp dry and toss them with the remaining oil mixture.
  3. Remove the sheet pan from the oven, arrange the seasoned shrimp and lemon slices alongside the asparagus.
  4. Return the pan to the oven and bake for another 8-10 minutes, until shrimp are pink and asparagus is tender-crisp.
Serving
  1. Garnish with fresh parsley and serve immediately.

Notes

For extra flavor, marinate the shrimp for 15 minutes before cooking. Ensure the shrimp are patted very dry for a better sear.
