Prepare Chicken
- Combine cubed chicken with soy sauce, sesame oil, ginger, garlic, lemon juice, and oregano in a bowl, ensuring even coating. Marinate in the refrigerator for 20 minutes to 2 hours.
Make Sauce
- Whisk together mayonnaise, sweet chili sauce, Sriracha, rice vinegar, honey, lemon zest, and parsley in a separate bowl. Adjust Sriracha or honey to taste and set aside.
Thread Skewers
- If using wooden skewers, ensure they are soaked; then thread marinated chicken pieces onto skewers, leaving small gaps for even cooking.
Cook Skewers
- Choose your cooking method: grill on medium-high for 3-5 minutes per side, bake at 400°F (200°C) for 15-20 minutes flipping halfway, or pan-fry in oil for 8-12 minutes until cooked through.
Sauce and Serve
- Once cooked, toss chicken (removed from skewers) with about half the sauce, or brush/drizzle sauce over skewers on a platter and serve with extra sauce on the side. Garnish with green onions or cilantro, sesame seeds, and lemon wedges.
Notes
For best results, marinate the chicken for at least 30 minutes to allow the flavors to penetrate. Adjust the spice level of the Bang Bang sauce by adding more or less Sriracha. If grilling, make sure your grates are clean and well-oiled to prevent sticking. Always ensure chicken is cooked through to an internal temperature of 165°F (74°C).
