  • 3-4 garlic cloves, minced
  • 1 can diced tomatoes 14.5 oz, undrained
  • 3 cups chicken or vegetable broth
  • 1/2 cup heavy cream
  • 8 oz short pasta penne, rotini, or cavatappi
  • 2-3 cups baby spinach fresh
  • 1/2 cup grated Parmesan cheese plus more for serving
  • Salt and freshly ground black pepper to taste
  • Fresh parsley or basil for garnish (optional)

Method
 

Cooking Steps
  1. Heat olive oil in a large skillet and cook the Italian sausage until browned, then drain excess fat.
  2. Add chopped onion to the skillet and cook until softened, then stir in minced garlic.
  3. Pour in diced tomatoes, broth, and heavy cream; bring to a simmer. Add uncooked pasta, ensuring it's mostly submerged.
  4. Cover the skillet, reduce heat, and simmer for 12-15 minutes until pasta is al dente and liquid is absorbed, stirring occasionally.
  5. Remove from heat, stir in spinach until wilted, then fold in Parmesan cheese. Season with salt and pepper, and garnish with fresh herbs if desired.

Notes

For an extra kick, use hot Italian sausage. If you prefer a milder flavor, opt for mild Italian sausage. You can substitute chicken or vegetable broth depending on your dietary preferences and what you have on hand.
