  • lemon Juice of 1/2 lemon
  • 1/4 teaspoon red pepper flakes optional, for a kick
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped for garnish

Cooking Steps
  1. Pat the shrimp dry and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat, then add minced garlic and red pepper flakes; cook for 30 seconds until fragrant.
  3. Add shrimp to the skillet and cook for 1-2 minutes per side until pink; remove and set aside.
  4. Add halved cherry tomatoes to the same skillet and cook for 2-3 minutes until they soften.
  5. Pour in broth and lemon juice, scraping up browned bits, and bring to a simmer.
  6. Stir in spinach a handful at a time, allowing it to wilt for 1-2 minutes.
  7. Return shrimp to the skillet, toss gently, and heat through for about 30 seconds.
  8. Taste and adjust seasoning with salt, pepper, or lemon juice as needed.
  9. Serve immediately, garnished with fresh chopped parsley.

Notes
