Cooking Steps
- Thoroughly pat the shrimp dry and toss it in a bowl with 1 tablespoon of olive oil, minced garlic, smoked paprika, oregano, red pepper flakes (if using), salt, and pepper, ensuring even coating.
- Heat a 10-inch cast iron skillet over medium-high heat for 2-3 minutes, until it is very hot, to achieve a good sear.
- Add the remaining 1 tablespoon of olive oil to the hot skillet, then add the seasoned shrimp in a single layer, cooking in batches if necessary to avoid overcrowding.
- Cook the shrimp for 1-2 minutes per side, until they turn pink, opaque, and are just cooked through, being careful not to overcook them.
- Remove the skillet from the heat, sprinkle with chopped fresh parsley, and serve immediately with fresh lemon wedges.
Notes
