Cooking Steps
  1. Thoroughly pat the shrimp dry and toss it in a bowl with 1 tablespoon of olive oil, minced garlic, smoked paprika, oregano, red pepper flakes (if using), salt, and pepper, ensuring even coating.
  2. Heat a 10-inch cast iron skillet over medium-high heat for 2-3 minutes, until it is very hot, to achieve a good sear.
  3. Add the remaining 1 tablespoon of olive oil to the hot skillet, then add the seasoned shrimp in a single layer, cooking in batches if necessary to avoid overcrowding.
  4. Cook the shrimp for 1-2 minutes per side, until they turn pink, opaque, and are just cooked through, being careful not to overcook them.
  5. Remove the skillet from the heat, sprinkle with chopped fresh parsley, and serve immediately with fresh lemon wedges.

Notes

For extra flavor, marinate the shrimp for 15-20 minutes before cooking. Adjust red pepper flakes to your preferred spice level.
