Ingredients

Main Ingredients
  • 1.5 lbs Large shrimp peeled and deveined, tails on or off
  • 3 tablespoons Olive oil good quality extra virgin
  • 4-5 cloves Garlic minced
  • 1 Lemon large (half for juice, half for slices)
  • ¼ cup Fresh parsley chopped
  • 1 teaspoon Dried oregano or 1 tablespoon fresh
  • ½ teaspoon Red pepper flakes optional
  • Salt to taste
  • Freshly ground black pepper to taste

Equipment

  • Oven
  • Baking sheet
  • Parchment paper
  • Large bowl
  • Whisk

Method

Preparation
  1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleaning.
  2. In a large bowl, combine olive oil, minced garlic, lemon juice, dried oregano, red pepper flakes (if desired), salt, and pepper.
  3. Add shrimp to the marinade and toss gently to coat, then let it sit for 5-10 minutes for optimal flavor.
  4. Arrange the marinated shrimp in a single layer on the prepared baking sheet and place thin lemon slices among the shrimp.
Cooking
  1. Bake for 8-12 minutes, or until the shrimp are opaque and pink; avoid overcooking to prevent a rubbery texture.
  2. Garnish immediately with fresh chopped parsley and serve.

Notes

For an extra kick, add a pinch more red pepper flakes. This dish pairs wonderfully with a side of pasta or a fresh green salad.
