Zesty Crockpot Chicken Tacos with Rotel

  • 2-3 pounds boneless, skinless chicken breasts or thighs
  • 1 cup chicken broth
  • 1 packet (or 2 tablespoons) taco seasoning
  • 1 (10-ounce) can diced tomatoes with green chilies (Rotel), undrained
  • 1 small onion, diced
  • 2-3 cloves garlic, minced
  • 1 lime, for juicing
  • 1/4 cup fresh cilantro, chopped optional

Method
 

Instructions
  1. Lightly grease the inside of your crockpot or use a slow cooker liner for easy cleanup.
  2. Place the diced onion and minced garlic evenly at the bottom of the slow cooker.
  3. Arrange the chicken breasts or thighs over the onion and garlic, then sprinkle taco seasoning over the chicken.
  4. Pour chicken broth and Rotel over the chicken; do not stir.
  5. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the chicken is very tender and easily shreddable.
  6. Remove the cooked chicken to a cutting board or bowl and shred into bite-sized pieces using two forks.
  7. Return the shredded chicken to the crockpot, stir it into the liquid, and squeeze half a lime over it. Stir well to combine, adding more lime juice if desired.
  8. Serve the warm chicken in tortillas with your favorite toppings.

Notes

For an extra kick, add a pinch of cayenne pepper with the taco seasoning or choose a spicy Rotel. Customize your tacos with different toppings such as pickled jalapeƱos or a drizzle of crema. This recipe is also great for meal prepping; simply store the shredded chicken in an airtight container in the refrigerator for up to 3-4 days.
