- Lightly grease the inside of your crockpot or use a slow cooker liner for easy cleanup.
- Place the diced onion and minced garlic evenly at the bottom of the slow cooker.
- Arrange the chicken breasts or thighs over the onion and garlic, then sprinkle taco seasoning over the chicken.
- Pour chicken broth and Rotel over the chicken; do not stir.
- Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the chicken is very tender and easily shreddable.
- Remove the cooked chicken to a cutting board or bowl and shred into bite-sized pieces using two forks.
- Return the shredded chicken to the crockpot, stir it into the liquid, and squeeze half a lime over it. Stir well to combine, adding more lime juice if desired.
- Serve the warm chicken in tortillas with your favorite toppings.
Notes
For an extra kick, add a pinch of cayenne pepper with the taco seasoning or choose a spicy Rotel. Customize your tacos with different toppings such as pickled jalapeƱos or a drizzle of crema. This recipe is also great for meal prepping; simply store the shredded chicken in an airtight container in the refrigerator for up to 3-4 days.
