  • 1 tbsp milk dairy or non-dairy
  • 1/4 cup chopped spinach
  • 2 tbsp crumbled feta cheese
  • 1/4 cup diced bell peppers any color
  • 1 tsp olive oil
  • Salt and black pepper to taste
  • red pepper flakes Optional: a pinch of red pepper flakes for heat

Method
 

Cooking Steps
  1. In a small bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  2. Heat olive oil in a non-stick pan over medium heat; then add diced bell peppers and sauté for 2-3 minutes until slightly softened.
  3. Add the chopped spinach to the pan and cook for another minute until wilted.
  4. Pour the egg mixture over the vegetables in the pan.
  5. As the eggs begin to set, gently push them from the edges towards the center, allowing the uncooked egg to flow underneath.
  6. Once the eggs are mostly set but still slightly moist, sprinkle the crumbled feta cheese over the top.
  7. Cook for another 1-2 minutes until the eggs are cooked to your desired consistency and the feta is slightly warm and melty.
  8. Remove from heat, sprinkle with optional red pepper flakes, and serve immediately.

Notes

This scramble is highly customizable; feel free to add other vegetables like mushrooms, onions, or cherry tomatoes. For a richer flavor, you can use heavy cream instead of milk. Serve with a side of whole-grain toast for a complete meal.
