Method
 

Preheat & Prep
  1. Preheat your oven to 350°F (175°C) and lightly grease an 8x8 inch baking pan or line a muffin tin with liners.
Make Oat Flour
  1. In a food processor or high-speed blender, process the rolled oats until they reach a fine flour-like consistency.
Combine Dry Ingredients
  1. In a large bowl, whisk together the oat flour, baking powder, baking soda, cinnamon, nutmeg, and ginger. Set aside.
Combine Wet Ingredients
  1. In a separate bowl, whisk the eggs, maple syrup (or honey), melted coconut oil, and vanilla extract until well combined.
Mix Together
  1. Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
Add Carrots & Optional Add-ins
  1. Gently fold in the grated carrots and any optional additions like raisins or nuts.
Bake
  1. Pour the batter into your prepared pan or divide evenly among muffin cups, then bake for 25-30 minutes for a loaf or 20-25 minutes for muffins, or until a toothpick inserted into the center comes out clean.
Cool
  1. Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes
