Preheat & Prep
- Preheat your oven to 350°F (175°C) and lightly grease an 8x8 inch baking pan or line a muffin tin with liners.
Make Oat Flour
- In a food processor or high-speed blender, process the rolled oats until they reach a fine flour-like consistency.
Combine Dry Ingredients
- In a large bowl, whisk together the oat flour, baking powder, baking soda, cinnamon, nutmeg, and ginger. Set aside.
Combine Wet Ingredients
- In a separate bowl, whisk the eggs, maple syrup (or honey), melted coconut oil, and vanilla extract until well combined.
Mix Together
- Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
Add Carrots & Optional Add-ins
- Gently fold in the grated carrots and any optional additions like raisins or nuts.
Bake
- Pour the batter into your prepared pan or divide evenly among muffin cups, then bake for 25-30 minutes for a loaf or 20-25 minutes for muffins, or until a toothpick inserted into the center comes out clean.
Cool
- Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
