Equipment

  • Oven
  • 8x8 inch baking dish
  • Parchment paper (optional)
  • Large mixing bowl
  • Fork
  • Spoon

Method

Preparation
  1. Preheat your oven to 375°F (190°C) and line an 8x8 inch baking dish with parchment paper or lightly grease it.
  2. In a large bowl, mash the ripe bananas until mostly smooth, leaving a few small lumps for texture.
  3. Add the milk, maple syrup (or honey), and vanilla extract to the mashed bananas and stir well until combined.
Mixing and Baking
  1. Incorporate the rolled oats, ground cinnamon, and salt into the wet mixture, stirring until just combined and moistened. Fold in any optional additions if desired.
  2. Transfer the oat mixture into the prepared baking dish, pressing it down firmly and evenly.
  3. Bake for 20-25 minutes, or until the edges are golden brown and the center is set. Allow the bars to cool completely in the baking dish before slicing, as they firm up significantly upon cooling.

Notes

Cooling the bars completely is crucial for them to set properly. You can store these bars in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week. They are also freezer-friendly!
