- Cook pasta in a large pot of salted boiling water according to package directions until al dente, reserving 1 cup of pasta water before draining.
- Heat olive oil in a large skillet over medium heat, then sauté minced garlic for 30 seconds until fragrant.
- Add chopped spinach to the skillet and cook, stirring frequently, for 2-3 minutes until wilted.
- Pour in heavy cream and broth, bringing the mixture to a gentle simmer.
- Reduce heat to low, stir in Parmesan cheese until melted and smooth, then season with salt, pepper, and optional red pepper flakes.
- Add drained pasta to the sauce in the skillet and toss to coat; add reserved pasta water if the sauce is too thick.
- Serve in bowls, garnished with extra Parmesan cheese.
Notes
For an extra boost of flavor, you can add a squeeze of fresh lemon juice at the end. Feel free to add cooked chicken or shrimp for a more substantial meal.
