  • 10-12 sheets sheets rice paper wrappers
  • 2 cups mixed fresh fruit, thinly sliced or cut into small pieces
Optional dipping sauce components
  • 1/4 cup Greek yogurt or coconut cream
  • 1-2 tablespoons honey or maple syrup adjust to taste
  • 1 teaspoon fresh lime juice
  • 1/2 teaspoon vanilla extract optional
  • Pinch cinnamon optional

Method
 

Instructions
  1. Wash and thoroughly dry all chosen fruits, then slice larger fruits into thin strips or small pieces; smaller fruits can be left whole.
  2. Set up a clean, flat rolling surface with a shallow dish of warm water and a parchment-lined serving platter.
  3. Dip one rice paper wrapper in warm water for 15-20 seconds until soft and pliable, being careful not to oversoak.
  4. Lay the softened wrapper flat and arrange 1-2 tablespoons of fruit horizontally slightly below the center, leaving space on the sides.
  5. Fold the bottom edge over the fruit, then fold in the sides tightly, and finally roll the entire package tightly from bottom to top, placing seam-side down on the platter.

Notes

For best results, consume immediately. If making ahead, cover with a damp paper towel and refrigerate for up to an hour to prevent drying. Experiment with different fruit combinations for variety.
