Preparation
- Preheat your oven to 400°F (200°C).
- Wash and chop vegetables into bite-sized pieces. Toss them with 2 tablespoons of olive oil, salt, and pepper, then spread them in a single layer on a baking sheet.
Roasting
- Roast the vegetables for 15-20 minutes, until tender-crisp and slightly caramelized.
- While vegetables roast, pat salmon fillets dry and season generously with salt and pepper.
- In a small bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, and optional honey/maple syrup or paprika.
- Brush the lemon-garlic mixture over the salmon fillets.
Final Cook
- After 15-20 minutes, add the seasoned salmon fillets to the baking sheet with the vegetables, skin-side down if applicable.
- Return the baking sheet to the oven and cook for another 10-15 minutes, until the salmon is cooked through and flakes easily.
- Remove from the oven, squeeze fresh lemon juice over the dish, and garnish with fresh dill before serving.
Notes
For extra flavor, marinate the salmon in the lemon-garlic mixture for 15-20 minutes before cooking. Adjust cooking times based on the thickness of your salmon fillets and desired doneness. A sprinkle of red pepper flakes can add a little heat if desired.
