Vibrant Lemon-Garlic Salmon & Roasted Veggies

  • 4 (6-ounce) salmon fillets skin-on or off
  • 1 lb assorted vegetables e.g., 1 cup asparagus, 1 cup broccoli florets, 1 bell pepper, 1/2 pint cherry tomatoes, chopped
  • 3 tablespoons olive oil divided
  • 1 lemon zested and juiced
  • 3 cloves garlic minced
  • 1/4 cup fresh dill chopped (for garnish)
  • Salt and freshly ground black pepper to taste
  • 1 teaspoon honey or maple syrup Optional
  • 1/2 teaspoon paprika Optional

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash and chop vegetables into bite-sized pieces. Toss them with 2 tablespoons of olive oil, salt, and pepper, then spread them in a single layer on a baking sheet.
Roasting
  1. Roast the vegetables for 15-20 minutes, until tender-crisp and slightly caramelized.
  2. While vegetables roast, pat salmon fillets dry and season generously with salt and pepper.
  3. In a small bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, and optional honey/maple syrup or paprika.
  4. Brush the lemon-garlic mixture over the salmon fillets.
Final Cook
  1. After 15-20 minutes, add the seasoned salmon fillets to the baking sheet with the vegetables, skin-side down if applicable.
  2. Return the baking sheet to the oven and cook for another 10-15 minutes, until the salmon is cooked through and flakes easily.
  3. Remove from the oven, squeeze fresh lemon juice over the dish, and garnish with fresh dill before serving.

Notes

For extra flavor, marinate the salmon in the lemon-garlic mixture for 15-20 minutes before cooking. Adjust cooking times based on the thickness of your salmon fillets and desired doneness. A sprinkle of red pepper flakes can add a little heat if desired.
