Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
- Spread the uncooked rice evenly in the prepared baking dish, then top with the chicken pieces and scatter the frozen broccoli.
- In a separate bowl, whisk together the cream of chicken soup, condensed cheddar cheese soup, milk, garlic powder, onion powder, salt, and pepper until smooth.
Baking
- Pour the creamy soup mixture over the chicken, rice, and broccoli in the baking dish and gently stir to ensure the rice is submerged.
- Cover the baking dish tightly with aluminum foil and bake for 30 minutes.
- Carefully remove the foil, stir well, then re-cover and bake for another 20-30 minutes, or until the rice is tender and chicken is cooked to 165°F (74°C).
Serving
- Remove from the oven and let stand, covered, for 5-10 minutes, then fluff with a fork before serving.
Notes
For an extra creamy result, you can add a splash of heavy cream with the milk. If you prefer a milder flavor, reduce the garlic and onion powder to 1/2 teaspoon each. Serving suggestions: A simple green salad or crusty bread would complement this dish beautifully.
