Cooking Steps
- Lightly grease the inside of your slow cooker crock to prevent sticking and make cleanup easier.
- Spread the entire bag of frozen seasoned potato wedges or tater tots evenly across the bottom of the slow cooker; no thawing is needed.
- Open the jar of fully cooked chunky beef stew and pour it directly over the frozen potatoes, spreading it out to cover as much as possible.
- Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours until potatoes are tender and the casserole is heated through and bubbling.
- Once cooked, stir gently if desired, then spoon out and enjoy your delicious Cowboy Casserole.
Notes
This recipe is incredibly versatile! Feel free to add shredded cheese to the top during the last 30 minutes of cooking for an extra layer of flavor. You can also customize it by adding other vegetables like corn or peas along with the beef stew. This dish is perfect for a cozy night in or a hassle-free potluck contribution.
