Tropical Chia Seed Pudding Jars

Ingredients
  

Pudding
  • 1/4 cup chia seeds
  • 1 cup coconut milk canned, light
  • 1 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1 tbsp lime juice Optional
Toppings
  • 1/2 cup diced fresh mango
  • 1/4 cup shredded coconut unsweetened
  • 1/4 cup diced fresh pineapple

Method
 

Preparation
  1. In a jar, combine chia seeds, coconut milk, maple syrup, vanilla extract, and optional lime juice.
  2. Stir vigorously for 1-2 minutes to prevent clumps and ensure even mixing.
  3. Let the mixture sit for 5 minutes, then stir again.
  4. Cover and refrigerate for at least 4 hours, or overnight, until thickened.
Serving & Storage
  1. Layer the thickened pudding with diced mango, pineapple, and shredded coconut.
  2. Assemble individual jars just before serving for optimal freshness, or up to 2-3 days in advance.
  3. Store assembled jars in an airtight container in the refrigerator for up to 3 days.

Notes

For best results, prepare the pudding the night before. Adjust sweetness to your liking by adding more or less maple syrup. Fresh, ripe fruit is key for the best flavor.
