- Combine chia seeds, coconut milk, maple syrup (if using), vanilla extract, and salt in a jar or bowl.

- Stir again after chilling; adjust consistency by adding more coconut milk if too thick or a few more chia seeds if too thin, refrigerating for an additional 30 minutes if needed.
- Before serving, top the pudding with diced mango and shredded coconut and enjoy chilled.
