Tangy Balsamic Garlic Chicken with Burst Tomatoes & Wilted Spinach

  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch thick pieces or pounded thin
  • 1 tbsp olive oil plus 1 tsp more if needed
  • 4-5 cloves garlic, minced
  • 1/2 cup balsamic vinegar good quality
  • 1/2 cup chicken broth low sodium
  • 1 pint cherry tomatoes, halved
  • 5-6 oz fresh spinach (about 5-6 cups), packed
  • 1 tsp dried Italian seasoning (divided)
  • Salt and freshly ground black pepper to taste

Method
 

Instructions
  1. Pat chicken dry and season with salt, pepper, and ½ teaspoon of Italian seasoning.
  2. Sear chicken in 1 tablespoon of olive oil over medium-high heat for 3-4 minutes per side until golden brown, then remove and set aside.
  3. Reduce heat to medium, add an additional teaspoon of olive oil if needed, and cook minced garlic for 30 seconds until fragrant.
  4. Pour in balsamic vinegar and chicken broth, scraping up browned bits, then stir in the remaining ½ teaspoon of Italian seasoning.
  5. Simmer the sauce and add halved cherry tomatoes, cooking for 5-7 minutes until they soften and burst.
  6. Return chicken to the skillet, add fresh spinach on top, cover, and cook for 3-5 minutes until chicken is cooked through and spinach is wilted.
  7. Remove from heat, stir everything together, adjust seasoning as needed, and garnish with fresh herbs or Parmesan if desired before serving.

Notes

This dish can be served with pasta, rice, or crusty bread to soak up the delicious sauce. For a spicier kick, add a pinch of red pepper flakes with the garlic. Ensure balsamic vinegar is good quality for the best flavor.
