Preparation
- Pat the sirloin steak dry with paper towels and season generously with salt and black pepper.
- Whisk together the soy sauce, honey, rice vinegar, minced garlic, grated ginger (if using), and red pepper flakes in a small bowl; set aside.
Cooking
- Heat the olive oil in a large skillet or cast-iron pan over medium-high heat until shimmering.
- Add steak bites in a single layer, cook for 1-2 minutes per side until seared, working in batches if needed, then remove to a plate.
- Reduce heat to medium, pour the sauce into the skillet, stirring to deglaze, and bring to a simmer.
- Stir the cornstarch slurry and slowly whisk into the simmering sauce, continuing to stir until the sauce thickens, about 1-2 minutes.
- Return seared steak bites to the skillet and toss gently to coat evenly with the sticky sauce.
- Remove from heat and serve hot.
Notes
For extra flavor, marinating the steak in half of the sauce mixture for 15-20 minutes before cooking can enhance its tenderness and taste. Be careful not to overcook the sirloin bites, as they can become tough. The key to tenderness is a quick sear and then a brief toss in the sauce.
