Sauce Ingredients
  • 1/4 cup low sodium soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 clove garlic minced
  • 1 tsp fresh ginger grated (optional)
  • 1/2 tsp red pepper flakes
  • 1/2 tbsp cornstarch mixed with 1 tbsp cold water

Method
 

Preparation
  1. Pat the sirloin steak dry with paper towels and season generously with salt and black pepper.
  2. Whisk together the soy sauce, honey, rice vinegar, minced garlic, grated ginger (if using), and red pepper flakes in a small bowl; set aside.
Cooking
  1. Heat the olive oil in a large skillet or cast-iron pan over medium-high heat until shimmering.
  2. Add steak bites in a single layer, cook for 1-2 minutes per side until seared, working in batches if needed, then remove to a plate.
  3. Reduce heat to medium, pour the sauce into the skillet, stirring to deglaze, and bring to a simmer.
  4. Stir the cornstarch slurry and slowly whisk into the simmering sauce, continuing to stir until the sauce thickens, about 1-2 minutes.
  5. Return seared steak bites to the skillet and toss gently to coat evenly with the sticky sauce.
  6. Remove from heat and serve hot.

Notes

For extra flavor, marinating the steak in half of the sauce mixture for 15-20 minutes before cooking can enhance its tenderness and taste. Be careful not to overcook the sirloin bites, as they can become tough. The key to tenderness is a quick sear and then a brief toss in the sauce.
