Ingredients
  

For the Chicken
  • 2 pieces boneless, skinless chicken breasts sliced into 1-inch pieces
  • 1 tablespoon olive oil
  • 1/2 teaspoon Salt and freshly ground black pepper e.g., 1/2 teaspoon each
  • 1/2 teaspoon garlic powder
For the Orzo
  • 1 cup orzo pasta
  • 2 cups chicken broth or water
For the Strawberry Balsamic Glaze
  • 1 cup balsamic vinegar
  • 1/2 cup fresh strawberries hulled and quartered
  • 1 tablespoon brown sugar optional, for extra sweetness
For Assembly
  • 1 cup fresh strawberries hulled and quartered (for serving)
  • 2 tablespoons fresh basil or mint chopped (for garnish)

Method
 

Prepare the Chicken
  1. Heat olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt, pepper, and garlic powder, then add to the skillet and cook for 5-7 minutes until golden brown and cooked through. Remove the chicken and set aside.
Make the Balsamic Glaze
  1. In the same skillet, add balsamic vinegar, 1/2 cup quartered strawberries, and brown sugar (if using). Simmer over medium heat for 10-15 minutes, stirring occasionally, until the sauce thickens and reduces by half; the strawberries will soften. You can strain the glaze for a smoother consistency or leave the strawberry bits.
Cook the Orzo
  1. While the glaze simmers, cook the orzo according to package directions using chicken broth for flavor, then drain any excess liquid."
Combine and Serve
  1. Return the cooked chicken to the skillet with the balsamic glaze and toss to coat. Stir in the cooked orzo.
Garnish
  1. Transfer the chicken and orzo mixture to serving bowls. Top with the remaining 1 cup of fresh, quartered strawberries and a sprinkle of fresh basil or mint, then serve immediately.

Notes

For a spicier kick, add a pinch of red pepper flakes to the chicken seasoning. If you don't have chicken broth, water works just fine for cooking the orzo, but the broth adds extra flavor.
