Prepare the Chicken
- Heat olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt, pepper, and garlic powder, then add to the skillet and cook for 5-7 minutes until golden brown and cooked through. Remove the chicken and set aside.
Make the Balsamic Glaze
- In the same skillet, add balsamic vinegar, 1/2 cup quartered strawberries, and brown sugar (if using). Simmer over medium heat for 10-15 minutes, stirring occasionally, until the sauce thickens and reduces by half; the strawberries will soften. You can strain the glaze for a smoother consistency or leave the strawberry bits.
Cook the Orzo
- While the glaze simmers, cook the orzo according to package directions using chicken broth for flavor, then drain any excess liquid."
Combine and Serve
- Return the cooked chicken to the skillet with the balsamic glaze and toss to coat. Stir in the cooked orzo.
Garnish
- Transfer the chicken and orzo mixture to serving bowls. Top with the remaining 1 cup of fresh, quartered strawberries and a sprinkle of fresh basil or mint, then serve immediately.
Notes
For a spicier kick, add a pinch of red pepper flakes to the chicken seasoning. If you don't have chicken broth, water works just fine for cooking the orzo, but the broth adds extra flavor.
