Spicy Southwest 5-Minute Breakfast Sandwich

This quick and easy breakfast sandwich combines a perfectly cooked egg, melty Monterey Jack cheese, and spicy jalapeños, all served on a toasted English muffin with a drizzle of salsa. It's the perfect way to start your day with a kick!

  • 1 English muffin
  • 1 large egg
  • 1 slice Monterey Jack cheese
  • 2 slices pickled jalapeños
  • 1 tablespoon salsa
  • 1 teaspoon butter or cooking spray
  • Salt and pepper to taste

  • Non-stick skillet

Method
 

Instructions
  1. Toast the English muffin until lightly golden.
  2. While the muffin toasts, cook the egg in a lightly greased non-stick skillet over medium heat, seasoning with salt and pepper. Cook for 1-2 minutes until whites are mostly set, then flip and cook for another 30 seconds for a firm yolk.
  3. Place the Monterey Jack cheese on the bottom half of the toasted English muffin.
  4. Place the cooked egg on top of the cheese, then arrange the pickled jalapeño slices on the egg.
  5. Drizzle with salsa, close the sandwich with the top English muffin half, and serve immediately.

Notes

For an even quicker egg, microwave a greased mug with the egg for 45-60 seconds after light whisking. Adjust jalapeño quantity to your spice preference.
