- Toast the English muffin until lightly golden.
- While the muffin toasts, cook the egg in a lightly greased non-stick skillet over medium heat, seasoning with salt and pepper. Cook for 1-2 minutes until whites are mostly set, then flip and cook for another 30 seconds for a firm yolk.
- Place the Monterey Jack cheese on the bottom half of the toasted English muffin.
- Place the cooked egg on top of the cheese, then arrange the pickled jalapeño slices on the egg.
- Drizzle with salsa, close the sandwich with the top English muffin half, and serve immediately.
Notes
For an even quicker egg, microwave a greased mug with the egg for 45-60 seconds after light whisking. Adjust jalapeño quantity to your spice preference.
