Method
 

Instructions
  1. Whisk eggs with red pepper flakes, salt, and pepper in a bowl.
  2. Heat olive oil in a non-stick pan over medium heat.
  3. Pour the egg mixture into the pan and let it set for 1-2 minutes without stirring.
  4. Spoon pesto evenly over the eggs once the edges are set but the center is still runny.
  5. Sprinkle feta cheese, olives, sun-dried tomatoes, and spinach over the eggs.
  6. Cook for another 2-3 minutes until eggs are set and cheese is slightly softened.
  7. Carefully slide the cooked eggs onto a plate.
  8. Garnish with fresh basil if desired.

Notes

This recipe is easily adaptable. Feel free to add other vegetables like diced bell peppers or onions for extra flavor and nutrients. Adjust red pepper flakes to your preferred spice level.
