  • 1 lb shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1/4 tsp red pepper flakes or more, to taste
  • 1/4 cup chicken or vegetable broth
  • 1 tbsp soy sauce
  • 1 tsp lime juice
  • 4 oz quick-cooking ramen noodles or angel hair pasta discard seasoning packet
  • 2 cups fresh spinach
  • Fresh cilantro or parsley, chopped for garnish, optional

Method
 

Cooking Instructions
  1. Cook noodles according to package directions, then drain and set aside.
  2. While noodles cook, heat olive oil in a large skillet over medium-high heat.
  3. Add shrimp to the skillet and cook for 1-2 minutes per side until pink and opaque; remove shrimp and set aside.
  4. Add minced garlic and red pepper flakes to the same skillet, sautéing for 30 seconds until fragrant.
  5. Pour in broth, soy sauce, and lime juice; bring to a simmer, scraping up any browned bits, and cook for 1 minute.
  6. Add cooked noodles and spinach to the skillet with the sauce, tossing until the spinach wilts (1-2 minutes).
  7. Return the cooked shrimp to the pan and toss everything together to combine.
  8. Serve immediately, garnished with fresh cilantro or parsley if desired.

Notes

Adjust red pepper flakes to your preferred spice level. For a richer flavor, use chicken broth; for a vegetarian option, vegetable broth works well.
