  • 1/2 cup chicken broth or water (optional)
  • 1 tbsp apple cider vinegar (optional)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper to taste
  • 1-2 chipotle peppers in adobo sauce minced
  • 1 tbsp adobo sauce
  • 1/4 cup brown sugar or maple syrup Optional: for sweetness

Method
 

Instructions
  1. Pat chicken dry with paper towels; slice large breasts in half horizontally.
  2. Place chicken in a single layer at the bottom of the slow cooker.
  3. Whisk together BBQ sauce, chicken broth (if using), apple cider vinegar (if using), garlic powder, onion powder, salt, pepper, minced chipotle peppers, adobo sauce, and optional brown sugar or maple syrup.
  4. Pour the BBQ sauce mixture evenly over the chicken, ensuring each piece is well coated.
  5. Cover and cook on low for 3-4 hours or on high for 2-3 hours, or until chicken is cooked through and easily shreds.
  6. Shred the chicken directly in the slow cooker with two forks, then stir until fully coated with the BBQ sauce.
