  • 1 Large Flour Tortilla
  • Shredded Monterey Jack Cheese (or a blend with Pepper Jack)
  • 1 scrambled egg
  • 1 slice cooked bacon, crumbled
  • Butter or Cooking Spray
  • hot sauce Optional: Dash of

Method
 

Preparation
  1. Lay the tortilla flat and sprinkle cheese over one half, leaving a small border.
  2. Layer the scrambled egg and crumbled bacon over the cheese; add hot sauce if desired.
Cooking
  1. Fold the empty half of the tortilla over the fillings to create a half-moon shape.
  2. Heat a lightly buttered or sprayed non-stick skillet over medium heat.
  3. Place the folded tortilla in the pan and cook for 60-90 seconds per side until golden brown and the cheese is melted.
Serving
  1. Remove from the pan, slice in half if desired, and serve immediately.

Notes

For an extra kick, add a pinch of red pepper flakes to the scrambled eggs.
