Preparation
- Lay the tortilla flat and sprinkle cheese over one half, leaving a small border.
- Layer the scrambled egg and crumbled bacon over the cheese; add hot sauce if desired.
Cooking
- Fold the empty half of the tortilla over the fillings to create a half-moon shape.
- Heat a lightly buttered or sprayed non-stick skillet over medium heat.
- Place the folded tortilla in the pan and cook for 60-90 seconds per side until golden brown and the cheese is melted.
Serving
- Remove from the pan, slice in half if desired, and serve immediately.
Notes
