Preparation
- If your cooked chicken is unseasoned, shred or dice it, then toss with cumin, chili powder, garlic powder, salt, and pepper in a small bowl.
- Place a large non-stick skillet or griddle over medium heat, then add about 1 teaspoon of olive oil or a pat of butter, coating the bottom.
Assembly and Cooking
- Lay one flour tortilla flat in the heated pan, then sprinkle a generous layer of shredded cheese over the entire surface.
- Distribute the seasoned cooked chicken evenly, then add another layer of shredded cheese over the chicken.
- Place a second tortilla on top, then cook for 3-4 minutes per side until golden brown, crispy, and the cheese is melted and gooey.
- Gently press down on the top tortilla with a spatula to help the layers fuse.
Serving
- Remove the cooked quesadilla, slice it into wedges, and serve immediately.
- Repeat the process for any remaining quesadillas, adding more oil or butter to the pan as needed.
Notes
For extra flavor, you can sauté some finely chopped onions or bell peppers with the chicken before adding them to the quesadilla. Serve with your favorite toppings like salsa, sour cream, or guacamole.
