Ingredients

Chicken
  • 2 lbs boneless, skinless chicken breasts or thighs
BBQ Sauce & Marinade
  • 1 cup store-bought BBQ sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon brown sugar optional
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • Salt to taste (optional)

Equipment

  • paper towels
  • medium bowl
  • whisk
  • baking sheet
  • parchment paper or foil

Method

Preparation
  1. Pat the chicken dry and slice breasts in half horizontally to create thinner cutlets.
  2. Whisk together BBQ sauce, soy sauce, Worcestershire sauce, Dijon mustard, brown sugar, garlic powder, onion powder, and black pepper in a medium bowl until well combined.
Marinating & Baking
  1. Add chicken to the marinade, ensuring it's thoroughly coated, then marinate for at least 15-20 minutes, or up to 4 hours in the refrigerator.
  2. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
  3. Arrange chicken in a single layer on the prepared baking sheet and bake for 20-30 minutes, until cooked through and an internal temperature of 165°F (74°C) is reached.
Finishing Touches & Serving
  1. Brush with extra BBQ sauce during the last 5-10 minutes of baking for a glaze, optionally broiling for 1-2 minutes for a sticky char.
  2. Remove from oven and let rest for 5 minutes before slicing or serving.

Notes

For best results, allow the chicken to marinate for a longer period. Adjust the amount of brown sugar and salt according to your preference.
