  • 1 cannellini beans (15 oz) can, rinsed and drained
  • 1 diced tomatoes (14.5 oz) can, undrained
  • ½ cup chicken broth
  • ½ tsp dried rosemary
  • ½ tsp dried thyme
  • red pepper flakes Pinch (optional)
  • 2 cups fresh spinach
  • ¼ cup grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • Crusty bread or quick-cooking couscous for serving (optional)

Cooking Steps
  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook until browned, then drain excess fat.
  2. Stir in chopped yellow onion and minced garlic, cooking until softened and fragrant.
  3. Add cannellini beans, diced tomatoes, chicken broth, rosemary, thyme, and red pepper flakes. Bring the mixture to a simmer.
  4. Reduce heat, cover, and cook for 8-10 minutes to allow flavors to meld and sauce to thicken.
  5. Stir in fresh spinach until wilted, which should take about 1-2 minutes.
  6. Remove from heat, stir in Parmesan cheese, and season with salt and pepper to taste.
  7. Serve hot, optionally with crusty bread or quick-cooking couscous.
