- Chop zucchini, dice onion, mince garlic, and chop sun-dried tomatoes. Ensure all ingredients are prepped before you begin cooking.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add ground turkey and cook until browned, breaking it up with a spoon, then drain any excess fat.
- Push the turkey to one side and add the remaining olive oil to the empty side, then cook the diced onion for 2-3 minutes. Add minced garlic and sun-dried tomatoes, cooking for another minute until fragrant.
- Stir the zucchini into the pan with the turkey and aromatics. Season generously with salt, black pepper, and Italian seasoning.
- Sauté for 5-7 minutes, stirring occasionally, until the zucchini is tender-crisp.
- Stir in the fresh spinach and cook for 1-2 minutes until completely wilted.
- Taste and adjust seasonings if necessary, then serve immediately. Garnish with crumbled feta and fresh basil, if desired.
Notes
For a spicier kick, add a pinch of red pepper flakes with the Italian seasoning. You can also substitute ground chicken for ground turkey. This dish pairs well with a side of crusty bread or a light salad.
