Speedy Tuscan Ground Turkey and Zucchini Skillet

  • 1 pound Ground Turkey lean
  • 2 medium-sized Zucchini chopped into bite-sized pieces
  • 1 small Onion diced
  • 3 cloves Garlic minced
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black Pepper or to taste
  • 1 teaspoon Italian Seasoning
  • ¼ cup Sun-Dried Tomatoes chopped (oil-packed, drained)
  • 2 cups Fresh Spinach packed
Garnish (optional)
  • 2 tablespoons Feta Cheese crumbled
  • 1 tablespoon Fresh Basil chopped

Method
 

Instructions
  1. Chop zucchini, dice onion, mince garlic, and chop sun-dried tomatoes. Ensure all ingredients are prepped before you begin cooking.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add ground turkey and cook until browned, breaking it up with a spoon, then drain any excess fat.
  3. Push the turkey to one side and add the remaining olive oil to the empty side, then cook the diced onion for 2-3 minutes. Add minced garlic and sun-dried tomatoes, cooking for another minute until fragrant.
  4. Stir the zucchini into the pan with the turkey and aromatics. Season generously with salt, black pepper, and Italian seasoning.
  5. Sauté for 5-7 minutes, stirring occasionally, until the zucchini is tender-crisp.
  6. Stir in the fresh spinach and cook for 1-2 minutes until completely wilted.
  7. Taste and adjust seasonings if necessary, then serve immediately. Garnish with crumbled feta and fresh basil, if desired.

Notes

For a spicier kick, add a pinch of red pepper flakes with the Italian seasoning. You can also substitute ground chicken for ground turkey. This dish pairs well with a side of crusty bread or a light salad.
