Cooking Instructions
  1. Heat olive oil in a non-stick pan over medium heat.
  2. Whisk eggs lightly with a fork in a small bowl and season with black pepper.
  3. Pour eggs into the heated pan; as edges set, gently push cooked portions to the center.
  4. When eggs are mostly set, add chopped spinach and feta cheese; cook for 1-2 minutes until spinach wilts and cheese softens.
  5. While eggs cook, toast the whole-wheat bread.
  6. Serve scrambled eggs immediately with toast, adding sliced avocado if desired.

Notes

For fluffier eggs, add a splash of milk or water when whisking. Adjust feta and spinach quantities to your preference.
