  • 0.25 cup crumbled feta cheese
  • 1 cup fresh spinach, roughly chopped
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste

Method
 

Instructions
  1. Heat olive oil in a non-stick skillet over medium heat.
  2. Add chopped spinach and sauté for 1-2 minutes until wilted.
  3. Whisk eggs with salt, pepper, and optional red pepper flakes in a small bowl.
  4. Pour egg mixture over the spinach in the skillet.
  5. As eggs set, gently push them from the edges to the center with a spatula to create soft curds.
  6. When mostly set but still moist, sprinkle crumbled feta cheese over the eggs.
  7. Continue cooking for 30-60 seconds until feta is warm and eggs are cooked to desired consistency.
  8. Serve immediately, perhaps with whole-wheat toast or avocado slices.
