- Lightly beat eggs with milk, salt, and pepper in a small bowl until well combined.
- Heat olive oil or butter in a non-stick skillet over medium heat.
- Sauté chopped spinach in the skillet for 1-2 minutes until wilted.
- Pour the egg mixture over the spinach.
- As eggs set, gently push them from the edges to the center with a spatula.
- When eggs are mostly set but still moist, sprinkle in the crumbled feta cheese.
- Continue cooking for 30 seconds to 1 minute until cheese is warmed and eggs are cooked to your liking.
- Serve hot, optionally with whole-wheat toast.
Notes
Adjust seasoning to your preference. For extra flavor, add a pinch of garlic powder when cooking the spinach.
