  • 2 large eggs
  • 1 milk (dairy or plant-based) splash of
  • Salt and black pepper to taste
  • 1 cup fresh spinach roughly chopped
  • 2 tablespoons crumbled feta cheese
  • 0.5 tablespoon olive oil or butter
  • 1 slice whole-wheat toast Optional for serving

Method
 

Instructions
  1. Lightly beat eggs with milk, salt, and pepper in a small bowl until well combined.
  2. Heat olive oil or butter in a non-stick skillet over medium heat.
  3. Sauté chopped spinach in the skillet for 1-2 minutes until wilted.
  4. Pour the egg mixture over the spinach.
  5. As eggs set, gently push them from the edges to the center with a spatula.
  6. When eggs are mostly set but still moist, sprinkle in the crumbled feta cheese.
  7. Continue cooking for 30 seconds to 1 minute until cheese is warmed and eggs are cooked to your liking.
  8. Serve hot, optionally with whole-wheat toast.

Notes

Adjust seasoning to your preference. For extra flavor, add a pinch of garlic powder when cooking the spinach.
