  • 2 large eggs
  • 1 tablespoon milk
  • 1/4 cup fresh baby spinach roughly chopped
  • 2 tablespoons crumbled feta cheese
  • Salt and freshly ground black pepper to taste
  • 1 teaspoon olive oil or butter
  • 1 slice whole-wheat toast Optional for serving

Method
 

Preparation
  1. In a small bowl, whisk together the eggs, milk, salt, and pepper until well combined and slightly foamy.
  2. Heat the olive oil or butter in a small non-stick skillet over medium heat.
  3. Pour the egg mixture into the hot skillet and gently push cooked portions towards the center as eggs set, allowing uncooked egg to flow underneath.
  4. When eggs are mostly set but still slightly wet, sprinkle in the chopped spinach and crumbled feta cheese.
  5. Continue to cook for 30 seconds to 1 minute, until spinach wilts and eggs are cooked to desired consistency.
  6. Transfer the scramble to a plate and serve immediately, optionally with whole-wheat toast.

Notes

Adjust salt and pepper to your preference. For a richer scramble, you can add a splash of cream instead of milk.
