Preparation
- In a small bowl, whisk together the eggs, milk, salt, and pepper until well combined and slightly foamy.
- Heat the olive oil or butter in a small non-stick skillet over medium heat.
- Pour the egg mixture into the hot skillet and gently push cooked portions towards the center as eggs set, allowing uncooked egg to flow underneath.
- When eggs are mostly set but still slightly wet, sprinkle in the chopped spinach and crumbled feta cheese.
- Continue to cook for 30 seconds to 1 minute, until spinach wilts and eggs are cooked to desired consistency.
- Transfer the scramble to a plate and serve immediately, optionally with whole-wheat toast.
Notes
Adjust salt and pepper to your preference. For a richer scramble, you can add a splash of cream instead of milk.
