Speedy Southwest Ground Turkey Bowl

This quick and easy southwest ground turkey bowl is packed with flavor and healthy ingredients, perfect for a weeknight meal. Lean ground turkey is seasoned with taco spices and combined with black beans, corn, and bell pepper, then topped with your favorite fresh toppings.

  • 1 lb lean ground turkey (93% or higher)
  • 1 tbsp olive oil
  • 1 medium onion (finely diced)
  • 2-3 garlic (minced)
  • Salt and black pepper to taste
  • 1 can (15 oz) black beans (rinsed and drained)
  • 1 cup corn (fresh, frozen, or canned)
  • 1 bell pepper (any color, diced)
  • 1 tbsp taco seasoning (low sodium)
  • 1/4 cup chicken or vegetable broth
Optional Toppings
  • 1/2 avocado (sliced)
  • 1/4 cup salsa
  • 2 tbsp plain Greek yogurt or light sour cream
  • 2 tbsp chopped cilantro

Cooking Instructions
  1. Heat olive oil in a large skillet over medium heat, then add diced onion and cook until softened for 5-7 minutes.
  2. Stir in minced garlic and cook for 1 minute until fragrant.
  3. Add ground turkey, break it apart, and cook until fully browned; drain excess grease.
  4. Season the cooked turkey with salt and black pepper to taste.
  5. Add diced bell pepper, black beans, and corn to the skillet; cook for about 5 minutes until vegetables are slightly softened.
  6. Stir in taco seasoning and broth; bring to a simmer and cook for 3-5 minutes until the sauce thickens and flavors meld.
  7. Taste the mixture and adjust seasoning as desired.
  8. Serve hot, garnished with optional avocado slices, salsa, Greek yogurt, or chopped cilantro.

Notes

This recipe is easily customizable. Feel free to add other vegetables like zucchini or sweet potato, or serve over rice or quinoa for a heartier meal.
