  • 1 lb large shrimp, peeled and deveined (fresh or frozen, thawed)
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1-2 tsp chili powder
  • 1/2 tsp cumin
  • Pinch cayenne pepper optional
  • Salt and black pepper to taste
  • 12 small corn or flour tortillas
For the Slaw
  • 1 cup pre-shredded cabbage mix
  • 2 tbsp mayonnaise or Greek yogurt
  • 1 tbsp lime juice
  • 1 tbsp chopped cilantro optional
  • 1/4 tsp salt
Desired Toppings
  • avocado slices
  • salsa
  • extra lime wedges

Method
 

Preparation
  1. Combine shredded cabbage mix, mayonnaise or Greek yogurt, 1 tablespoon lime juice, cilantro (if using), and 1/4 teaspoon salt in a medium bowl; mix well and set aside.
  2. Toss shrimp with olive oil, 1 tablespoon lime juice, chili powder, cumin, cayenne (if using), salt, and black pepper in a separate bowl until evenly coated.
Cooking
  1. Heat a large non-stick skillet over medium-high heat, then add seasoned shrimp in a single layer and cook for 2-3 minutes per side until pink and opaque.
  2. While shrimp cooks, warm tortillas either by stacking 5-6 in a damp paper towel and microwaving for 30-60 seconds, or heating one at a time in a dry skillet for 15-20 seconds per side.
Assembly
  1. Set up a taco bar with the cooked shrimp, warmed tortillas, zesty slaw, and desired toppings like avocado slices, salsa, or extra lime wedges.
  2. Encourage everyone to build their own tacos and finish with a squeeze of fresh lime juice.

Notes

Adjust spice level to your preference. Don't overcrowd the pan when cooking shrimp to ensure even cooking and a good sear.
