Scrambled Eggs
  • 2-3 large eggs
  • 1 splash milk (dairy or non-dairy)
  • Pinch salt
  • Pinch black pepper
Avocado Toast
  • 1/2 avocado sliced or mashed
  • 1 slice whole-wheat bread
  • 1/2 teaspoon lemon juice (for avocado)
  • Pinch red pepper flakes (optional, for avocado)
Cooking
  • 1 teaspoon butter or olive oil

Method
 

Scrambled Eggs
  1. Whisk together eggs, milk, salt, and pepper in a small bowl; set aside.
  2. Heat a non-stick pan over medium heat with butter or olive oil.
  3. Pour egg mixture into the hot pan and let sit for 30 seconds.
  4. Gently push cooked edges towards the center with a spatula, folding until eggs are mostly set but still moist (2-3 minutes). Remove from heat.
Avocado Toast
  1. Toast the whole-wheat bread.
  2. Spread or layer sliced avocado on the toast, then drizzle with lemon juice and sprinkle with red pepper flakes, if desired.
Serving
  1. Serve the scrambled eggs immediately alongside the zesty avocado toast.

Notes
